Shamrock Pancakes

For breakfast this morning, I thought it would be fun to make something festive for breakfast. I had seen several blogs with shamrock pancakes recipes, so I thought I’d try my hand at it. My girls were thrilled to have such fun, tasty panckes and ate them for breakfast, lunch and dinner. No joke!

My Pancake Recipe:

3 C. flour
2 1/3 Tbsp. baking powder
1 tsp. salt
2 Tbsp. sugar
1 Tbsp. ground flax seed
2 1/2 C. milk
2 eggs
1/3 C. butter
1 banana
1 tsp. vanilla
Several drops of green food coloring

Heat up electric skillet to 325 degrees. Melt butter in a small bowl in the microwave. Combine dry ingredients in a large mixing bowl. Mix in milk, eggs, butter, banana, and vanilla until smooth. Add in drops of green food coloring until you reach desired color. Spoon mix into squeeze bottle. You may need to make the hole of your bottle larger by cutting off the tip. Squeeze pancake mix onto skillet to make shamrock shape by making 3 connecting hearts and a stem. Let cook until the bubbles in the pancake pop and stay open. Flip the pancake and allow to cook for a few more minutes until golden.
